One of the things I find most interesting about blogging is looking at my blog stats. (I know so nerdy right?) Sometimes the statistics are predictable, but other times they are very surprising. Who would have ever thought that the post I did on Mini Egg Cookies in 2013 would be my most popular post. And by a huge margin! I guess people love Mini Eggs.
So, being the thoughtful person that I am, I decided I need to give the people what they want: more Mini Egg Recipes. I tried a Mini Egg Blondie recipe earlier this week, however it didn’t quite turn out like I wanted it to. So, I sat and thought long and hard about what else would benefit from the addition of candy coated chocolate. Then the answer was clear: pancakes.
This is so easy I almost hesitate to call it a recipe (especially when you cheat and use pancake mix like I did), but… these are too good not to share.
Mini Egg Pancakes
– pancake mix and any ingredients required on the pancake mix box
– whatever ingredients are required for your favourite pancake recipe
– crushed Mini Eggs (you will need about 1/3 cup for every 4 pancakes)
– Maple Syrup
Put the Mini Eggs in a Zip Lock bag, use a rolling-pin to gently crush the Mini Eggs.
Prepare the pancake batter and add in most of the crushed Mini Eggs (reserve some for garnish).
Warm up a large, non stick frying pan. Melt in about a tablespoon of butter.
Once the pan is warm, pour in the batter and cook the pancakes until both sides are lightly browned.
Pile up the pancakes, pour on some syrup and top with the remaining crushed up Mini Eggs.
And that’s it, you’re done!
These pancakes were delightful. Not only were they wonderfully chocolatey, but the Mini Egg candy coating also added a nice crunch and some festive colour!
