Crostini with Bocconcini and Pesto

t always feels like a little bit of a cop-out to make something so simple, but sometimes easy is good.

It’s hard to believe that summer has come and gone so quickly! As usual, it’s been an incredibly busy summer filled with lake weekends, dinners, get-togethers with friends, and taking part in all of the wonderful summer events and festivals that Edmonton has to offer. Throw in a family wedding and a long weekend trip and it’s crazy busy (but awesome). Despite my seemingly never-ending summer cold, it’s been such a great summer, but I’m also looking forward to Fall (that is if we actually get a Fall). I have a couple of fun trips coming up, my brother’s wedding and then, before you know it, Christmas is going to creep up!

Last weekend I hosted my family for Sunday dinner, and I was brainstorming for a quick appetizer I could whip together that would require minimal effort, but would still be really tasty. Then I remembered the delicious fresh mozzarella that I’d enjoyed at Tavern 1903 and how I’d decided to rip off… I mean borrow, the idea. So, off to the Italian Centre I went, to pick up a freshly baked baguette, some jarred Italian Pesto and some bocconcini. Easy! And all together, the ingredients cost less than $10. All I had to do was make the crostini, plate the pesto and bocconcini and voila- appetizer complete. And to top it all off, everyone raved about it. So really, it was win-win-win!

Crostini with Bocconcini and Pesto

– 1 baguette
– 1 jar of pesto (or you could make your own)
– 1 large bocconcini
– olive oil
– sea salt

1. Slice the entire baguette. Each piece should be about a 1/4 inch thick.
2. Lay the slices on a sheet pan.

3. Drizzle with a little bit of olive oil and then sprinkle with sea salt.
4. Place the crostini under the broiler in the oven until they are golden brown.
5. Meanwhile, place your bocconcini ball on a plate and then top with pesto.
6. Serve and enjoy!

This is so easy that I really hesitate to even call this a recipe, but it was also such a hit that I wanted to share it! If you are looking for a really simple and delicious appetizer that will be sure to impress, I recommend trying this out! It always feels like a little bit of a cop-out to make something so simple, but sometimes easy is good. And in this case, really good!
