Thai Butternut Squash Soup with Shrimp

While writing my post about the Thai Kitchen #TKLucky7 Recipe Challenge, I got thinking about some of my favourite Thai recipes.  And since I have been focusing on healthy eating here on Life is Better Red, I thought I’d share one of my favourite, easy and healthy recipes that has a bit of a Thai kick: Thai Butternut Squash Soup.

Thai Butternut Squash Soup

This soup is super easy to prepare, the hardest thing about it is cutting up the Butternut Squash (although that could be easily avoided if you bought the pre-cut squash from Costco). The original recipe is from Canadian Living and it’s a slow cooker recipe, however as I don’t have a slow cooker, I had to improvise a little bit.

Thai Butternut Squash Soup with Shrimp

  • 4 cups cubed and peeled butternut squash (this is about one whole squash)
  • 1 can light Thai Kitchen coconut milk
  • 2 cups sodium reduced chicken stock
  • 1 tbsp Thai Kitchen Thai red curry paste
  • 6 thin slices fresh ginger
  • 1 1/2 tsp fish sauce
  • 1/4 tsp brown sugar
  • large raw shrimp, peeled and deveined

Butternut Squash

In large pot combine squash, coconut milk, chicken stock, curry paste, ginger, fish sauce and brown sugar.

Bring to bowl and then turn down to low. Simmer on the stove for about an hour and half, or until the squash is very tender.

Blending the Soup

Let the soup cool. Then, use a blender to purée the soup.

Return the soup to the pot, turn to low and stir in the shrimp to cook. Warm for about 15 minutes and then serve.

Thai Butternut Squash SoupThis is a super hearty soup perfect for a cold winter day (which we haven’t really had lately in Edmonton, but whatever, it’s still good). It’s very easy to prepare, healthy and very tasty. That’s a win-win-win as far as I am concerned.

I was also happy to make this soup as it gave me another reason to try out my awesome new blender I received from Nick and Lauren for Christmas, the Ninja. It’s super intense and can pretty much chop anything into oblivion. The nice thing about this blender, too, is that it’s rated almost as highly as a Vitamix by Consumer Reports, however costs significantly less! Wahoo! I love my Ninja.:)

    I was going to ask how the Ninja worked, but I see that you’re pleased with it. 😄😄
    Your soup is delicious without the shrimp too, for those of us who aren’t seafood fans.

    • I love my Ninja! It’s proven to be a great blender so far. And, yes, seafood could be easily omitted.

  2. This soup looks delicious! I love Thai flavors. I’m so excited to travel to Thailand in May and eat all the things!
    PS. I will have to check out the Ninja blender. I have been coveting a Vitamix but there’s no way I can afford one, so the Ninja might be a good option to try!

    • Thailand should be amazing, I am sure there is going to be way too much good food! Yes and I highly recommend checking out the Ninja, I am so happy with mine. 🙂
