Shrimp Stir Fry

My mom was out-of-town a little while ago so it was up to me and my dad to feed ourselves. I think overall we did pretty good… we only went to McDonald’s once!

Last Wednesday it was my turn to make dinner and I decided I wanted to make something with shrimp in it, as my mom isn’t a big seafood fan, so it was a good time to cook with seafood when she wasn’t around. I also really like noodles, so I did a quick search on google for “shrimp, stir fry, vermicelli, recipe” and found this recipe.  I didn’t follow the recipe exactly, but used it for guidance and inspiration when making my own stir fry.

On my way home I stopped at our local Sobey’s and picked up a red pepper, green onions, bean sprouts, vermicelli noodles and some prawns. I accidentally bought some pretty huge prawns, I think I would have preferred smaller ones in the stir fry, but these worked just fine too.

I used a really simple sauce for my stir fry:

  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tsp sugar
  • Siracha hot sauce to taste

I think the stir fry turned out pretty good, tasted nice, light and flavourful. Good for a hot summer day, but it would have been better if the sauce was a little thicker. I’ll have to keep trying out different recipes.

Tonight I am going to a pop-up dinner with a friend… intrigued? Two words: mosh burger
