Food trucks have been rising in popularity in North America over the past few years. They seem to have really taken off in Edmonton over the past year or so, in no small part thanks to What The Truck?!, an awesome food truck event organized by local bloggers Sharon Yeo and Mack Male.
On August 3rd I went with my friend Allie to the latest What The Truck event which was held on Victoria Promenade. I don’t think there could have been a more beautiful venue for the event. It was a perfect Edmonton summer evening, with a gorgeous view of the river valley.
We arrived at the event at about 7:30 and by that time it was already super busy. Allie and I wandered along the promenade to check out the different trucks before making our choice. I had really been hoping to try out Drift again, but as usual the line was a mile long. As much as I really love food trucks and the innovative food they prepare, I often find the lines are just SO long. Too long! This event was no different, so we headed towards the truck with the shortest line, the Lingnan food truck.
Between the 2 of us we shared the Singapore Noodles, Dry Spicy Chicken, and Spring Rolls. The Lingnan truck was really good about getting the food out quickly, I don’t think we waited for more than 5 minutes to get our food.
We found an empty patch of grass and dug into the food. It was all delicious– hot and flavourful! As usual, the Lingnan didn’t disappoint. What a great summer event!
